Double Chocolate Banana Bread

Double Chocolate Banana Bread
Super soft Double Chocolate Banana Bread. So moist, full of banana flavor & loaded with chocolate. So delicious & the recipe only takes 10 minutes to make!

Ingredients

1 cup all-purpose flour , spooned & leveled
3/4 cup unsweetened cocoa , sifted
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt , to taste
1/3 cup unsalted butter , melted & cooled to room temperature
2 large eggs , room temperature
1 cup lightly packed brown sugar
2 teaspoons vanilla
1 cup mashed bananas - about 2 large or 3 small very ripe bananas mashed
3 tablespoons milk , buttermilk, 1%, 2%, skim or almond
1 cup chocolate chips , plus a few tablespoons extra for sprinkling on top


Instructions

Preheat the oven to 350F degrees. Line a 9x5 inch loaf pan with parchment paper leaving an overhang on each side, or grease and flour. Set aside.
In a large bowl whisk together the flour, cocoa, baking powder, baking soda, cinnamon and salt.
In a second large bowl using a stand or hand held electric mixer beat together the melted butter, eggs, sugar and vanilla until combined. Turn off the mixer and scrape down the sides of the bowl. Stir in the milk and mashed bananas using a large rubber spatula or wooden spoon. Finally, fold in the flour mixture about 1/2 half at a time with your spatula/spoon followed by the chocolate chips. The batter should be thick.
Pour/spoon the batter into your prepared pan and bake for 45-55 minutes until an inserted toothpick comes out clean (minus any melted chocolate chips). Around 40 minutes check to make sure that the top isn't browning too much. If it is - tent a piece of aluminium foil and place over the bread (without the foil touching the top) and continue baking.
Allow the bread to cool completely before removing from the pan and cutting into slices.
